About Our Meats Pasturefed Meat
Our livestock is grown with reference to Meat Standards Australia (MSA) quality control guidelines to deliver a consistency of eating quality. The guidelines that we find most beneficial relate to with livestock handling and are specifically designed to minimise stress. For example, we do not mix our livestock with animals that are not part of the herd within two weeks of dispatch, we do not overcrowd, and we do not use high stress handling techniques like dogs, loud noises and electric prodders. Our livestock are free to roam and always have access to plenty of quality feed, fresh water and shelter. They are only fed on pasture, hence our brand name Gippsland Pasturefed Meat. Chefs will insist on buying meat when it has been dry aged for at least 14 days. Ageing on the bone (hanging) enhances tenderness by allowing naturally occurring enzymes in the meat to break down muscle fibre. The weakening of the muscle fibre enhances the eating quality of the meat. This critical part in the process is sometimes skipped by commercial retail butchers and supermarket meat and results in disappointing meat quality. Gippsland Pasturefed Meat always age our meat on the bone for at least 2 weeks before packaging.
